Our unique approach to Irish Whiskey
During 2020 we relocated our single malt still to our St. Patrick’s Mills site.
We’ve been laying down new make Whiskey from other Irish distilleries since our inception in 2014. All of our whiskeys commence maturation in first fill bourbon barrels, finished in either port, sherry, or cognac casks. Using only hand selected premium oak casks we patiently mature in our bonded warehouse until ready for blending and bottling. This rare flexibility affords us the opportunity to patiently curate, nurture and craft our very own signature Irish whiskeys.

We are extremely proud to be a fully verified member of Origin Green – Ireland’s National Food & Beverage sustainability Programme, created by Bord Bia.
Origin Green is the only sustainability programme in the world that operates on a national scale, uniting government, the private sector and food producers through Bord Bia, the Irish Food Board.
St Patrick’s Distillery Ltd. plan to achieve a number of sustainability targets by 2024. We are committed to sourcing 80% of new packaging from suppliers that have sustainability certifications by the end of 2024. We also aim for product packaging to be 100% recyclable by 2024. St. Patrick’s Distillery Ltd. have set a community engagement target to increase its financial support of local charity organisations by 10% each year (2020-2024).
