A Story Rooted in Irish Tradition
Since 2014, St. Patrick’s has worked hand in hand with expert distillers and master blenders across Ireland to create spirits of distinction. The Maturation Journey
This whiskey began its life in first-fill, ex-Bourbon American oak casks — double charred to draw out rich notes of vanilla and caramel. After ten years, it was carefully re-casked into AB1 premium-grade, hand-selected oak casks, where it matured for more than a decade, gathering layers of depth and complexity.
Bottled at 46% ABV, non-chill filtered, and with natural colour, it retains the full integrity of its long maturation — every drop a testament to the passage of time.
Tasting Notes
Nose: A welcoming bouquet of toffee and ripe orchard fruits, lifted by subtle hints of dried fig and warming spice.
Palate: Silky and layered, with flavours of honeyed vanilla, candied orange peel, dark chocolate, and roasted nuts unfolding in sequence.
Finish: Long and elegant — mellow oak tannins linger with a gentle echo of dried fruits and soft tobacco leaf.
